Maine Strawberry Shortcake

Strawberry shortcake is a popular dessert made with fresh strawberries, whipped cream, and a delicious shortcake base. Ingredients
  

  • 8 cups strawberries, stemmed and quartered
  • 1/3 cup sugar
  • 1/4 cup sugar
  • 3 cups all-purpose flour
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup Kate's Buttermilk
  • 3/4 cups Kate's Unsalted Butter
  • Whipped cream as desired

Instructions
 

  • Preheat the over to 425 degrees F
  • Cover a baking pan with parchment paper
  • Mix together dry ingredients (flour, baking powder, baking soda, 1/3 cup sugar, and salt) in a mixing bowl.
  • Cut in refrigerated butter until the mixture appears as large crumbs.
  • Stir in Kate's Buttermilk until the flour mixture is moist.
  • Place small scoops of dough (roughly 1/3 cup each) about 2 inches apart on the parchment paper covered baking pan.
  • (Optional) Sprinkle sugar over the top of the dough.
  • Place dough in the oven and bake 15 to 20 minutes, or until golden brown.
  • Mix quartered strawberries and 1/4 cup sugar together in a bowl, and allow to rest about 30 minutes.
  • Serve strawberries over the shortcake. Add whipped cream as desired.
